Technical Regulations for Milk № 88-FZ are regulatory standards for raw milk and raw cream, milk and cream, drinking water, milk liquid products, cheese and cheese products, butter, oil spreads, sour cream and products thereof, ice cream , baby food, canned food for milk, cheese and cheese products, etc. Also there are written all the requirements set for the production, transport, storage, sale, disposal of dairy products.

The dairy products according to the technical regulations for milk
According to the TR dairy products can be divided into three types:
- Dairy products without milk and component parts, without the non-dairy fat and protein. It can contain only components which are functionally necessary for processing. Examples: butter, milk beverage, sour cream, cottage cheese, cream, yogurt, etc.
- dairy products made of milk or its component (s) with the addition (or without it) of the by-products of milk processing or nondairy products. The content of milk in the finished product must be at least 55%, in the sugary foods and ice cream – more than 40%. Example: fruit yogurt, cottage cheese with fruit, etc.
- Milk-products and (or) the products got in the milk processing milk-products and (or) the products which are the result of the milk processing; non-milk components with the addition of proteins. The content of milk in the finished product of milk powder should be greater than 20%. Example: milk pudding, cream sauce.
The by-products of milk processing are albumin, casein, whey, buttermilk, etc.
